Heirloom Coffee.  Don Rey has preserved Coffee bushes from the varietal "Pajarito".  This varietal was brought to Colombia to begin coffee growing in the region.  It was severely decimated by "coffee rust" and was replaced by varietals that were resistant to that plague.  As an early varietal it does not require heavy fertilization or fumigation.  As this varietal has all but been lost Cafe del Rey is a very unique coffee.  In stock at the moment are roasted beans from the "cosecha" of 2024 with about 20lbs remaining.  The roasting for this batch is a little darker than what we had been providing and darker than the others availble through Cafe Mio, registering at about 6.9.
